(makes 1 loaf – Prep: 10 minutes, most)

Wet Ingredients:

  • 1 cup ripe bananas
  • 1 tbsp lemon juice
  • 1/2 cup canola oil
  • 1/2 cup soy milk

Dry ingredients:

  • 2 cup brown sugar
  • 3/8 cups AP flour
  • 1 tsp salt
  • 1 1/4 tsp baking powder
  • 1 1/4 tsp baking soda
Directions:
  1. Mix wet ingredients and dry ingredients separately.
  2. Combine mixtures together.
  3. Pour in a parchment-lined loaf pan.
    Bake at 325ºF for 40 to 45 minutes.
