Ingredients
  

  • 4 large cucumbers peeled and thinly sliced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped fresh dill
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/4 cup crumbled feta cheese optional
  • 1/4 cup chopped walnuts optional

Instructions
 

  • Prepare the cucumbers:
    Peel and thinly slice 4 large cucumbers. Place the slices in a colander and sprinkle with a pinch of salt. Let it sit for about 10-15 minutes to draw out excess moisture. Afterward, rinse the cucumber slices with cold water, drain well, and pat dry with paper towels.
  • Make the dressing:
    In a small bowl, whisk together 1/4 cup of plain Greek yogurt, 1 tablespoon of lemon juice, 1/4 cup of chopped fresh dill, 1/4 cup of white wine vinegar, and a pinch of salt and pepper to taste. The dressing should have a nice balance of tangy and creamy consistency.
  • Assemble the salad:
    In a large bowl, combine the prepared cucumber slices, dressing, and 1/4 cup of crumbled feta cheese (if using). Toss gently to coat the cucumbers evenly with the dressing and feta cheese.
  • Add the crunch:
    Sprinkle 1/4 cup of chopped walnuts (if using) over the top of the salad and toss again to combine.
  • Serve:
    Divide the salad into 4 equal portions and serve immediately. You can also cover and refrigerate the salad for up to 2 hours before serving. Just give it a good toss before serving.
  • Garnish and enjoy:
