Ingredients
  

  • 8 oz macaroni
  • 2 tbsp unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled blue cheese optional
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cook the macaroni according to package instructions until al dente. Drain and set aside.

  • In a saucepan, melt the butter over low heat. Add the flour and whisk together to form a roux, cooking for 1-2 minutes. Slowly pour in the milk, continuously stirring to avoid lumps. Bring the mixture to a simmer and let cook for 5-7 minutes, until thickened. Remove from heat.
  • Add the Parmesan, cheddar, and blue cheese (if using) to the saucepan. Stir until the cheese is fully melted and the sauce is smooth. Season with salt and pepper to taste.
  • In a large mixing bowl, combine the cooked macaroni and cheese sauce. Mix well to coat the pasta evenly.
  • Transfer the macaroni and cheese to a baking dish and sprinkle additional grated cheese on top (optional).
  • Bake for 20-25 minutes or until the top is golden brown and the macaroni and cheese is heated through.
  • Garnish with chopped parsley and serve hot. Enjoy!
