Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy peanut butter or almond butter for a variation
  • 1/3 cup honey
  • 1/4 cup ground flaxseed
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped nuts almonds or walnuts work great
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions
 

  • In a large mixing bowl, combine all ingredients. Stir well until everything is evenly distributed and the mixture starts to come together.
  • Cover the bowl with plastic wrap and refrigerate for about 30 minutes. This will make the mixture easier to handle and shape.
  • Once chilled, use a cookie scoop or tablespoon to portion out the mixture. Roll each portion between your palms to form neat little balls.
  • Place the energy bites on a parchment-lined baking sheet.
  • Refrigerate for another 30 minutes to an hour to allow the bites to set.
  • Transfer to an airtight container and store in the refrigerator.
