Ingredients
  

  • 4 salmon fillets 6 oz each
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup cooked rice optional
  • Steamed vegetables optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a small saucepan, heat the olive oil over medium heat. Add the garlic and cook for 1-2 minutes, until fragrant.
  • Add the lemon juice, butter, and thyme to the saucepan. Stir until the butter has melted.
  • Place the salmon fillets in an oven-safe skillet or baking dish. Pour the lemon sauce over the salmon.
  • Season the salmon with salt and pepper.
  • Bake the salmon for 12-15 minutes, or until cooked through.
  • Serve the salmon with a side of cooked rice and steamed vegetables, if desired.
