  • Saucepan
  • Heatproof bowl
  • Plastic wrap or a lid
  • Ice cream maker or loaf pan and a fork
  • Freezer-safe container

Ingredients
  

  • 1 1/2 cups granulated sugar
  • 1 1/2 cups water
  • 1 cup freshly squeezed lemon juice about 6-8 lemons
  • 1 tablespoon finely grated lemon zest optional
  • Pinch of salt

Instructions
 

  • In a saucepan, combine the sugar and water over medium heat. Stir occasionally until the sugar has completely dissolved. This will create a simple syrup.
  • Remove the saucepan from the heat and let it cool for a few minutes.
  • Transfer the simple syrup to a heatproof bowl and add the freshly squeezed lemon juice, the lemon zest and a pinch of salt. Stir until well combined.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or until the mixture is completely chilled.
  • Once the lemon mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-25 minutes.

Alternatively, if you don't have an ice cream maker:

  • Pour the chilled lemon mixture into a loaf pan.
  • Place the pan in the freezer and let it freeze for about 1 hour, or until the edges start to solidify.
  • Remove the pan from the freezer and use a fork to scrape the frozen edges towards the center, breaking up any ice crystals.
  • Return the pan to the freezer and repeat this process every 30 minutes for the next 2-3 hours, or until the sorbet is smooth and creamy.
