Ingredients
  

  • 1 1/2 cups 190g all-purpose flour
  • 1/2 cup 115g unsalted butter, softened
  • 1/2 cup 115g granulated sugar
  • 1/4 cup 60g tahini
  • 2 large eggs
  • 2 tsp 10g lemon zest
  • 1 tsp 5g vanilla extract
  • 1/4 tsp 1.25g salt
  • 1/4 cup 60g lemon juice
  • 1 tablespoon sesame seeds optional

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, whisk together the flour, sugar, and salt.
  • In a small mixing bowl, whisk together the tahini, lemon juice, eggs, lemon zest, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until a dough forms.
  • If desired, stir in the sesame seeds.
  • Scoop the dough onto a baking sheet lined with parchment paper, about 2 tbsp (30g) per cookie.
  • Bake for 12-15 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
