- 1 1/2 cups 190g all-purpose flour
- 1/2 cup 115g unsalted butter, softened
- 1/2 cup 115g granulated sugar
- 1/4 cup 60g tahini
- 2 large eggs
- 2 tsp 10g lemon zest
- 1 tsp 5g vanilla extract
- 1/4 tsp 1.25g salt
- 1/4 cup 60g lemon juice
- 1 tablespoon sesame seeds optional
Preheat the oven to 375°F (190°C).
In a large mixing bowl, whisk together the flour, sugar, and salt.
In a small mixing bowl, whisk together the tahini, lemon juice, eggs, lemon zest, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until a dough forms.
If desired, stir in the sesame seeds.
Scoop the dough onto a baking sheet lined with parchment paper, about 2 tbsp (30g) per cookie.
Bake for 12-15 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
