- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter softened
- 2 large eggs
- 2 teaspoons grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup confectioners' sugar
- 1/4 teaspoon salt
Preheat your oven to 350°F (180°C). Line a 9x13-inch baking dish with parchment paper.
In a medium bowl, whisk together the flour and 1/2 cup of the granulated sugar. Add the softened butter and use your fingers or a pastry blender to work it into the flour mixture until it resembles coarse crumbs.
Press the crumb mixture evenly into the prepared baking dish. Bake for 20-25 minutes, or until the edges are lightly golden.
