Traditional Scallion Pancakes Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon white pepper
  • 1/4 cup vegetable oil
  • 1/2 cup warm water
  • 1/2 cup chopped scallions about 4-5 scallions
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sugar
  • 1/4 teaspoon baking powder

Instructions
 

Step 1: Prepare the ingredients

  • Chop the scallions finely and set aside.
  • In a large mixing bowl, combine the flour, salt, black pepper, and white pepper.
  • Gradually add the vegetable oil and warm water to the flour mixture, stirring until a soft dough forms.
  • Knead the dough for 5-10 minutes until it becomes smooth and elastic.
  • Divide the dough into 6-8 equal pieces.

Step 2: Roll out the dough

  • Roll out each piece of dough into a thin circle, about 1/8 inch thick.
  • Brush the surface of each circle with a little bit of vegetable oil.
  • Sprinkle a few pinches of chopped scallions onto the center of each circle.
  • Fold the dough over the scallions to form a half-moon shape, and press the edges together to seal.

Step 3: Heat the skillet and fry the pancakes

  • Heat a non-stick skillet or griddle over medium heat.
  • Place a few drops of vegetable oil onto the skillet and spread it around with a paper towel.
  • When the oil is hot, place the pancakes onto the skillet and cook for 2-3 minutes on each side, or until they are golden brown and crispy.
  • Serve the pancakes hot with soy sauce, sesame oil, and chili flakes sprinkled on top. Enjoy!
