Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon freshly squeezed lemon juice or apple cider vinegar
  • 1/2 cup vegan buttermilk (1/2 cup non-dairy milk + 1/2 tablespoon freshly squeezed lemon juice or apple cider vinegar, allowed to sit for at least 5 minutes before using.)
  • 1/2 cup avocado oil (120mL) or 8 tablespoons melted vegan butter
  • 3/4 cup packed light or dark brown sugar
  • 1 heaping cup mashed banana from 3 medium or 4 small, overripe bananas
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts Optional

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour your loaf pan.
  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk together the vegan buttermilk, avocado oil, brown sugar, mashed banana, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Fold in the walnuts, if using.
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before removing to a wire rack to cool completely.
