Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice

Instructions
 

  • In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the lemon zest and lemon juice.
  • Transfer the mixture to a saucepan and cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  • Remove the saucepan from the heat and let the lemon curd cool to room temperature.
  • Once the lemon curd has cooled, transfer it to an airtight container and refrigerate for at least 30 minutes before serving.
