- 1 pound large shrimp peeled and deveined
- 2 cups mixed greens such as arugula, spinach, and lettuce
- 1 cup cherry tomatoes halved
- 1/2 cup sliced red onion
- 1/2 cup diced cucumber
- 1/2 cup diced avocado
- Juice of 1 lemon
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1/4 teaspoon smoked paprika
Step 1: Peel and devein the shrimp, and rinse them under cold water. Pat dry with paper towels and set aside.
