Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 cups mixed greens such as arugula, spinach, and lettuce
  • 1 cup cherry tomatoes halved
  • 1/2 cup sliced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 teaspoon smoked paprika

Instructions
 

  • Step 1: Peel and devein the shrimp, and rinse them under cold water. Pat dry with paper towels and set aside.
  • Step 2: In a large bowl, combine the mixed greens, cherry tomatoes, sliced red onion, diced cucumber, and diced avocado.
  • Step 3: In a small bowl, whisk together the lemon juice, olive oil, salt, pepper, and smoked paprika. Pour the dressing over the salad mixture and toss gently to coat.
  • Step 4: Add the shrimp to the salad mixture and toss again to combine.
  • Step 5: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
  • Step 6: Before serving, sprinkle the top of the salad with additional chopped herbs if desired, and serve chilled.
